Production: limited edition 1,100 bottles
Production process: Manual harvest in 20-kg perforated boxes. In-winery handpicking. Complete stalking, maceration and pneumatic press. Cold debourbage. Alcoholic fermentation at a controlled temperature (15-16ºC). In-tank aging on fine lees for six months with “batonnage”. Clarification with non-allergen products. The wine remains for five months in the winery before being marketed.
Tasting notes: Clean and bright, pale yellow with olive-like flashes. It is delicate and elegant, with fruity and herbal notes (acerola, plums, elder, boxwood, star fruit) and subtle minerals (flint, quartz). Its mouth is a burst of sharp freshness, like the bubbling of a sprouting spring, wrapping, mineral flavour.
