Production process: Manual harvest in 20 kg-perforated boxes carried out during the first hours of the day so that grapes are fresh on arrival at the winery. After the stalking and the mechanical crushing, a pneumatic pressing is performed and the must is cooled down to 10-20º for its 24-hour debourbaging. The fermentation takes place at 16ºC (leaving +/-2 gr of residual sugar). Once the fermentation is finished, the wine is racked to eliminate thick lees. The wine is racked regularly for clearing and bentonite is used for clarifying. Lastly, it is stabilised for a week, lowering the temperature to -5ºC.

Secondary sweet aromas on a fennel herbal background. Sweet and pastry notes. It is unctuous, long, glycerine-like and very powerful in mouth. Varietal aftertaste. Long and lasting.
